Ingredients:
1/2 cups Flour
2 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Cinnamon
¼ tsp. Nutmeg
¼ tsp. Ginger
¼ tsp. Salt
2 Eggs
1/3 cup Brown Sugar
1 16-oz. can Packed Pumpkin
¼ cup butter (melted)
1/3 cup Toasted Pecans (chopped) |
Cream Cheese Glaze:
2 oz. Cream Chees
1 cup Powdered Sugar (sifted)
¼ tsp. Vanilla
1 to 3 tbsp. Milk
Orange Food Coloring |
Directions:
1. Pre-heat oven to 375 ° F
2. Grease and flour mini Bundt® pumpkin pans. Set aside.
3. In large bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Set aside.
4. In medium bowl, whisk eggs and brown sugar together until smooth. Mix in pumpkin and melted butter until well blended.
5. Add egg mixture to flour mixture and stir until blended.
6. Stir in pecans.
7. Spoon batter into prepared pans, dividing batter evenly.
8. Bake at 375 ° F for 20-25 minutes.
9. Cool 5 minutes in pan. Remove from pan and cool completely.
To make glaze:
1. In small bowl, combine cream cheese, butter, powdered sugar and vanilla.
2. Add milk one tablespoon at a time until the consistency of thick cream.
3. Stir in food coloring until as desired and drizzle cream cheese glaze over pumpkins.
Makes 12 single, or 6 double cakes. |
