Roast Turkey with Stuffing Recipe
Jumbo Roaster with Carving Set
Ingredients:
4 tbsp. Butter (room temperature)
1 tbsp. Fresh Rosemary (chopped)
1 tbsp. Sage
1 tbsp. Thyme
Coarse Salt
Pepper
1 12 lb. Turkey (whole, thawed, neck reserved)
4 - 6 Carrots (large, halved crosswise)
2 Onions (large, cut into 8 wedges)
2 Celery Stalks (halved crosswise)
Apricot Rice Stuffing:
1 cup Onion (finely chopped)
1 cup Celery (finely chopped)
1/2 cup Butter or Margarine
6 cups Rice (cooked)
1 1/2 cups Dried Apricots (chopped)
1/2 cup Fresh Parsley (minced)
1 tsp. Salt
1/2 tsp. Pepper
1/2 tsp. Dried Thyme
1/2 tsp. Ground Nutmeg
1/4 tsp. Ground Cloves
Directions:
To Make Stuffing:
1. Pre-heat oven to 350° F.
2. Sauté onion and celery with butter in a large skillet until tender.
3. Stir in rice, apricots, parsley and dried seasonings.
4. Transfer to a greased 1-quart baking dish.
5. Cover and bake at 350° F for 30 minutes. Uncover. Return to oven for 5-10 minutes longer or until heated through.
To Roast Turkey :
1. Pre-heat oven to 350° F. Set oven rack in lowest position. Make herb butter. (In a small bowl, mix together 4 tbsp. butter with chopped herbs. Season generously with salt and pepper.) Prepare and stuff turkey with cooked stuffing.

2. Cut neck into pieces and mix with carrots, onions and celery in a large roasting pan. Add 2 cups of water. Set roasting rack over vegetables.

3. Lift turkey onto rack. Rub with herb butter. Season generously with salt and pepper. Tent turkey loosely with foil. Roast for 1 hour. Baste every 30 minutes with pan liquids until an instant read thermometer inserted into the thickest part of the thigh (avoid hitting the bone!) registers 125° F. Approx. 3 hours.

4. Remove foil. Raise oven temperature to 400° F. Continue roasting, basting occasionally, until thigh reaches 180° F. Approx 45 minutes to an hour. Re-tent with foil if bird browns too quickly. Add water if pan becomes dry.

5. Transfer turkey to a serving platter. Add extra stems of rosemary to create a wreath around the turky on the platter before serving (optional). Cover loosely with foil and let rest for at least 30 minutes before carving. Serve with apricot stuffing, packaged stuffing or any other of your choice.
